Salmon and Quinoa Patties

Last night I truly did something I have never done before and created my own recipe from what I had in the kitchen! I am comfortable going off of a recipe but I always like to have guidance. 

This recipe came out of being home alone (and able to eat food that James isn’t crazy about) and craving the salmon patties that my Nanny used to make. Of course, she never had an official recipe for her salmon patties either and just like her, last night I started adding ingredients until I liked the taste.
 

This recipe is gluten free and something I will make again. 

Salmon and Quinoa Patties 

1 can salmon (I had Trader Joe’s in the pantry) 
1 cup cooked quinoa (I keep some precooked to use in dishes) 
1/2 cup chopped yellow onion
2 eggs (beaten) 
1/2 cup gluten free bread crumbs
1 Tablespoon of minced garlic (this can be adjusted to your taste) 
1 handful of  chopped kale (again, this is a preference. 

Directions
1. Mix items together and roll into salmon patties 

2. Heat a skillet on medium heat with olive oil and place as many salmon cakes as possible into skillet. Cover and cook for 7-9 minutes or until cakes are brown. 

3. Turn cakes and cook for another 7-9 minutes or until brown. 

4. Remove from heat and allow to cool. 

5. Enjoy!
