A few weeks ago I was craving Mexican food and after doing a quick search of Pinterest while standing in my grocery store, I was able to find this great recipe from the Paleo Newbie website. Fortunately I’ve finally reached the point in my pantry where I did not have to buy any specific spices and this taco seasoning not only smelled but tasted wonderful. For the recipe I made a complete pie crust but you could also use ramekins. It works best if you cook the crust for a few minutes before the complete pie.It was certainly a recipe that satisfied my craving and I think you will enjoy this whether you are eating Paleo or not. Top with slices of avocado or whatever garnish you would like This kept for several days and became better each day. Enjoy!

This looks so good! We have some form of Mexican every week at our house. I will definitely be attempting this!
It might be easier for you to mix the crust up first and have it ready – that way you don’t have to worry about making everything at the same time. Let me know how it tastes for you.
