Paleo Taco Pie

A few weeks ago I was craving Mexican food and after doing a quick search of Pinterest while standing in my grocery store, I was able to find this great recipe from the Paleo Newbie website. 
Fortunately I’ve finally reached the point in my pantry where I did not have to buy any specific spices and this taco seasoning not only smelled but tasted wonderful. For the recipe I made a complete pie crust but you could also use ramekins.  It works best if you cook the crust for a few minutes before the complete pie.
It was certainly a recipe that satisfied my craving and I think you will enjoy this whether you are eating Paleo or not. 
Ingredients
 
 
 
Taco Seasoning 
1tbs chili powder
1tsp salt
1 tsp ground pepper
1 tsp oregano
1 tsp thyme
1 1/12 tsp cumin
1/2 tsp paprika
1/4  tsp garlic powder
1/4 tsp onion powder
1/4 tsp red pepper flakes 
Taco Pie Crust:
2 cups of almond flour
2 eggs – whisked
1 tbs coconut oil 
1-2 tbs of the above taco seasoning
Taco Pie Filling
1 to 1 1/2 tbs of ground beef – browned
1 small onion diced
1/2 red pepper diced
1/2 green pepper diced
2 tbs taco seasoning
1 can (14 ox) of diced tomatoes with green chilies – liquid drained
2 avocados – diced 
 
Instructions
 1.  Combine ingredients for the taco seasoning in a small bowl – set aside
 2.  In a frying pan add 2 tbs of a fat of your choice
 3.  Add ground beef and brown, along with onions and peppers over medium heat until meat is cooked  and veggies tender
 4.  Drain fat from pan
 5.  Add 2 tbs of taco seasoning mix
 6.  Add 1/2 cup of the tomato sauce and stir
 7.  Simmer for several minutes
 
Time to make the crust – This will make a 9 inch pie crust or 4 ramekins 
 8.  In a medium bowl combine almond flour, whisked eggs and coconut oil into a dough
 9.  Grease pan or ramekins
10. Mix dough and form for which ever vessel you will be using for the pie
11. Press into pie pan or ramekins to form a crust 
12. Bake at 350 degrees unfilled for 8-10 minutes
13  Remove from oven and add the taco filling from the pan 
14. Top with diced tomatoes
15. Return to oven and bake at 350 degrees for another 20 minutes
16. Top with slices of avocado or whatever garnish you would like 
This kept for several days and became better each day. Enjoy!

      It might be easier for you to mix the crust up first and have it ready – that way you don’t have to worry about making everything at the same time. Let me know how it tastes for you.
